This wedge of queso idiazbal is a wonderful cheese that comes straight from the Basque Country in Northern Spain. Made using strictly sheep\’s milk (leche oveja), it has a deliciously mellow smokey flavor. This specific wedge won a world cheese award, so it is definitely worth the try.
